Ingredients

Baked Pumpkin Oatmeal
  • 1 cup canned pumpkin
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup maple syrup
  • 1 1/2 tsp pumpkin pie spice
  • 3 cups milk or milk alternative
  • 2 1/2 cups oats old fashioned preferred
  • 1 Tbsp chia seeds

Equipment

  • 8×8-inch baking pan
  • Medium mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Oven

Method

  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. In a medium mixing bowl, whisk together the pumpkin, eggs, vanilla, maple syrup, and pumpkin pie spice until fully blended.
  3. Pour in the milk and gently stir until incorporated.
  4. Add the oats and chia seeds to the wet mixture and mix until combined.
  5. Transfer the mixture evenly into the prepared 8x8 pan.
  6. Bake for 55–65 minutes, or until the center is set and no longer jiggles. In a metal pan, baking closer to 65 minutes may be needed.
  7. Let cool slightly before serving. Store any leftovers in the refrigerator.

Notes

You can use any milk you like, including almond, oat, or dairy options. Rolled (old fashioned) oats hold their texture best, but quick oats can also be used for a softer bake. Leftover pumpkin oatmeal stores well in the fridge for several days and reheats nicely in the microwave. For a make-ahead option, bake, cool, then slice into portions for easy breakfasts. Top servings with a drizzle of maple syrup, a splash of milk, or yogurt. This recipe can be adapted with add-ins such as walnuts, raisins, or chocolate chips for extra flavor and variety.
