- Pat the halloumi slices dry with paper towels to remove excess moisture.
- Heat olive oil in a non-stick skillet over medium heat until shimmering.
- Arrange halloumi slices in a single layer in the pan and cook undisturbed for 2-3 minutes on each side, until golden-brown.
- After flipping, sprinkle with herbs if using.
- Transfer to a plate and serve immediately while hot.
