Ingredients
  

  • 1.5 pounds ground beef 80/20 recommended
  • 1 cup seasoned breadcrumbs
  • 0.5 cup ketchup divided
  • 2 large eggs
  • 1 medium onion finely grated or minced

Method
 

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper or foil.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, half of the ketchup, and grated onion. Mix with hands just until combined, avoiding overmixing.
  3. Transfer mixture to prepared sheet pan and shape into a compact loaf, approximately 8 × 4 inches.
  4. Spread remaining ketchup evenly over the top of the meatloaf.
  5. Bake for 35-40 minutes, or until internal temperature reaches 160°F (71°C).
  6. Let rest for 5-10 minutes before slicing and serving.

Notes

For best results, don't overmix the meat mixture as this can lead to a tough meatloaf. The 80/20 ground beef ratio helps keep the meatloaf moist and tender. You can make this gluten-free by using crushed rice crackers or rolled oats instead of breadcrumbs. The recipe can also be made with ground turkey or chicken, but add a tablespoon of olive oil for moisture. Let the meatloaf rest before slicing to keep it juicy.
