- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper or foil.
- In a large bowl, combine ground beef, breadcrumbs, eggs, half of the ketchup, and grated onion. Mix with hands just until combined, avoiding overmixing.
- Transfer mixture to prepared sheet pan and shape into a compact loaf, approximately 8 × 4 inches.
- Spread remaining ketchup evenly over the top of the meatloaf.
- Bake for 35-40 minutes, or until internal temperature reaches 160°F (71°C).
- Let rest for 5-10 minutes before slicing and serving.
Notes
For best results, don't overmix the meat mixture as this can lead to a tough meatloaf. The 80/20 ground beef ratio helps keep the meatloaf moist and tender. You can make this gluten-free by using crushed rice crackers or rolled oats instead of breadcrumbs. The recipe can also be made with ground turkey or chicken, but add a tablespoon of olive oil for moisture. Let the meatloaf rest before slicing to keep it juicy.
