- Gather and prepare all ingredients: rinse and pick over the lentils, chop the onion, mince the ginger and garlic, and core and chop the tomatoes.
- Add all ingredients to a large pot: lentils, onion, ginger, garlic, curry powder, cumin, dried red chilies, and tomatoes.
- Pour in enough water to cover all ingredients completely.
- Bring the mixture to a boil over high heat, then reduce to a steady simmer.
- Let simmer for about 1 hour, stirring occasionally to prevent sticking. The lentils should become soft and the flavors well-developed.
