Ingredients
  

  • 2 teaspoons ground cumin
  • 3 garlic cloves minced
  • 1 onion roughly chopped
  • 2 dried red chilies or hot red pepper flakes to taste
  • 1 tablespoon curry powder hot or mild, your preference
  • 1 lb dried lentils rinsed and picked over
  • 2 inch fresh ginger peeled and minced
  • 3-4 tomatoes cored and roughly chopped
  • Salt and black pepper to taste
  • Water enough to cover ingredients

Method
 

  1. Gather and prepare all ingredients: rinse and pick over the lentils, chop the onion, mince the ginger and garlic, and core and chop the tomatoes.
  2. Add all ingredients to a large pot: lentils, onion, ginger, garlic, curry powder, cumin, dried red chilies, and tomatoes.
  3. Pour in enough water to cover all ingredients completely.
  4. Bring the mixture to a boil over high heat, then reduce to a steady simmer.
  5. Let simmer for about 1 hour, stirring occasionally to prevent sticking. The lentils should become soft and the flavors well-developed.
  6. Season with salt and black pepper to taste.
  7. Serve immediately or refrigerate for later use.

Notes

This dal is incredibly versatile - use red lentils for a creamier texture or brown/green lentils if you prefer them to hold their shape. For extra richness, try adding a dollop of coconut milk before serving. The flavors continue to develop overnight, making this perfect for meal prep. Refrigerate leftovers for up to 5 days.
