Method
- Set the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, toss the trimmed asparagus with olive oil, and season with a pinch of salt and pepper.
- Combine the whole grain mustard and honey in a small bowl, mixing until smooth.
- On a floured surface, roll out the puff pastry sheets and cut each into 4 squares, giving you 8 squares total.
- Spread 1–2 teaspoons of the honey mustard mixture over the center of each pastry square.
- Place 1–2 slices of deli meat over the honey mustard layer.
- Arrange about 4 asparagus spears on top of the meat in each square.
- Sprinkle shredded cheese over the asparagus.
- Lift two opposite corners of the pastry and fold them over the filling to enclose it. Press gently to seal.
- Arrange the bundles on the prepared baking sheet and repeat with all remaining squares.
- Brush the tops of the bundles with the beaten egg and sprinkle with everything bagel seasoning, if using.
- Bake for 20–25 minutes, or until the pastry is golden and crisp. Serve hot with extra honey or mustard if desired.
Notes
Be sure to use thin asparagus spears so they cook through with the pastry. You can substitute the cheese or deli meat based on your preference; Brie, Parmesan, or herbed cream cheese all work well, and turkey or salami are great alternatives. The bundles can be assembled up to 8 hours in advance and refrigerated before baking—just add the egg wash right before they go in the oven. For best results, keep puff pastry cold while working. Reheat leftovers in a 350°F oven to restore crispness; microwaving softens the pastry. Serve warm as brunch, appetizer, or paired with salad or soup for a light meal.
