Ingredients

  • 1 Lime, zested and juiced
  • 1/2 cup Granulated sugar
  • 2 cups Fresh blackberries plump and deeply colored

Equipment

  • Medium saucepan
  • Immersion blender or potato masher
  • Glass jar

Method

  1. Combine blackberries, sugar, lime zest, and lime juice in a medium saucepan.
  2. Place over medium heat and bring to a simmer, stirring frequently to prevent sticking.
  3. Continue cooking for 25-30 minutes, stirring often, until the berries break down and the mixture thickens enough to coat the back of a spoon.
  4. For a smoother texture, blend with an immersion blender. For a chunkier jam, mash with a potato masher or fork until desired consistency is reached.
  5. Allow the jam to cool completely before transferring to a clean jar.
  6. Store in the refrigerator for 2-3 weeks.

Notes

If your blackberries are particularly tart, add an extra tablespoon or two of sugar to taste. For delicious variations, try adding ¼ teaspoon of cinnamon for a warming autumn twist, or infuse with a sprig of mint or basil during cooking (remove before jarring) for an herbal note that pairs wonderfully with cheese.
This versatile jam is excellent spread on toast, swirled into yogurt, layered in cakes, or served alongside sharp cheddar on a cheese board. For a quick dessert, try a spoonful over vanilla ice cream.
