Ingredients
  

  • 1/2 cup fresh blood orange juice
  • 1-2 teaspoons maple syrup or simple syrup to taste
  • 3-4 ounces club soda or sparkling water chilled
  • 1 sprig fresh rosemary plus extra for garnish
  • 1 teaspoon lemon juice optional
  • ice
  • 1 blood orange wheel thin slice, for garnish (optional)

Method
 

  1. Gently clap a rosemary sprig between your palms to release the aromatic oils.
  2. Place the rosemary sprig in a tall glass.
  3. Add blood orange juice and maple syrup (or simple syrup) to the glass.
  4. If desired, add lemon juice to balance sweetness.
  5. Stir well to dissolve the sweetener completely.
  6. Fill the glass with ice.
  7. Slowly pour in the chilled club soda or sparkling water.
  8. Gently stir to combine without losing carbonation.
  9. Garnish with an additional rosemary sprig and/or blood orange wheel if desired.

Notes

Make ahead tip: Mix blood orange juice and sweetener up to 24 hours in advance and refrigerate. Add ice and carbonated water just before serving. For a less sweet version, skip the sweetener and use naturally sweet sparkling water. You can substitute regular oranges, grapefruit, or tangerines when blood oranges aren't in season. For an alcoholic version, add a splash of gin or vodka.
