  • 4 low-carb flour tortillas
  • 1 cup diced celery
  • 1/2 cup fat-free blue cheese dressing
  • 1 cup peeled, shredded carrot
  • 2 cups shredded cooked chicken breasts rotisserie chicken works well
  • 2 tablespoons hot pepper sauce adjust to taste
  • 1 cup peeled, seeded, diced cucumber
  • 2 cups shredded lettuce

Method
 

  1. In a mixing bowl, combine the shredded chicken with hot pepper sauce, stirring well to ensure all chicken pieces are evenly coated.
  2. Lay out the four tortillas and spread 2 tablespoons of blue cheese dressing on each one.
  3. Layer each tortilla with ½ cup shredded lettuce, followed by ½ cup of the buffalo chicken mixture.
  4. Add ¼ cup diced celery, ¼ cup diced cucumber, and ¼ cup shredded carrot to each tortilla.
  5. Fold in the sides of each tortilla and roll up tightly, tucking in the edges as you go to secure the filling.
  6. Optional: Secure with toothpicks if needed or warm tortillas slightly before assembly for easier rolling.

Notes

For meal prep, assemble these wraps ahead of time but add the lettuce just before eating to maintain crispness. Wraps can be stored in the refrigerator for up to 2 days when tightly wrapped in plastic.
Ranch dressing makes a great substitute if you're not a fan of blue cheese. For a lower-carb option, try using large lettuce leaves instead of tortillas.
