Butter Swim Biscuits

These incredibly tender and rich biscuits literally swim in butter while baking, creating a golden, crispy exterior and soft, fluffy interior. They're ridiculously easy to make with no rolling or cutting required - just mix, pour, and bake.

Ingredients
  

  • 2.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups buttermilk well-shaken
  • 0.5 cup unsalted butter melted (1 stick)
  • 1 tablespoon butter melted, for brushing tops (optional)

  • 8×8-inch or 9×9-inch baking dish
  • Large mixing bowl
  • Whisk

Method
 

  1. Preheat oven to 450°F (230°C).
  2. Melt 1/2 cup butter and pour it into an 8×8-inch or 9×9-inch baking dish.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  4. Pour in buttermilk and stir just until combined. Don't overmix - a few lumps are fine.
  5. Pour the thick batter over the melted butter in the baking dish, spreading it evenly to the edges. Do not stir into the butter.
  6. Score the unbaked dough into 9 equal squares.
  7. Optional: brush tops with additional tablespoon of melted butter.
  8. Bake for about 25 minutes, or until tops are golden brown and edges are crispy.

Notes

If you don't have buttermilk, make a substitute by adding 2 tablespoons of vinegar or lemon juice to regular milk and let sit for 5 minutes. You can use salted butter instead of unsalted - just reduce the added salt slightly. These biscuits are versatile and can be served with honey, jam, gravy, or alongside soups and stews. They're best served warm straight from the oven.
