Notes

For the crunchiest texture, shred your carrots and apples right before assembling the slaw. If prepping ahead, toss the shredded apples with a little lemon juice to prevent browning. The slaw is best after a short rest in the refrigerator, but you can make it up to a day in advance. If the mixture seems dry after chilling, stir in another spoonful of mayo or a splash of vinegar. Leftovers keep well in the fridge for up to three days, but the slaw does not freeze. For a dairy-free option, omit the feta or substitute with toasted seeds or nuts.
