Ingredients
  

  • 1 pound ground beef 85/15 or 90/10 recommended
  • 1/4 cup bell pepper chopped
  • 1/2 teaspoon black pepper
  • 1 (16 ounce) refrigerated buttermilk biscuits large size, such as Pillsbury Grands
  • 1/4 cup ketchup
  • 6-8 slices American cheese
  • 1/4 cup onion chopped
  • 1 (8 ounce) tomato sauce

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef with the chopped onion and bell pepper until the meat is no longer pink.
  3. Drain any excess fat from the meat mixture and return to the pan.
  4. Add the tomato sauce, ketchup, and black pepper to the meat mixture. Stir to combine and heat through on low heat.
  5. Arrange the refrigerated biscuits around the perimeter of a casserole dish, standing them on their edges to create a crown-like border.
  6. Spoon half of the meat mixture into the center of the biscuit-lined dish.
  7. Layer half of the cheese slices over the meat mixture, tearing them into strips if needed for even coverage.
  8. Add the remaining meat mixture on top of the cheese layer.
  9. Cover the entire meat mixture with the remaining cheese slices to create a top layer.
  10. Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and the cheese is completely melted and bubbly.
  11. Allow to cool for 5 minutes before serving.

Notes

For a lighter version, substitute ground turkey for the beef. You can also add diced pickles to the meat mixture for an authentic burger flavor. The casserole reheats beautifully - store leftovers in an airtight container in the refrigerator for up to 3 days and reheat individual portions in the microwave.
