These savory meatloaf bites combine classic comfort food with fun finger food portions. Each bite is stuffed with gooey mozzarella cheese and topped with a tangy-sweet glaze, making them perfect for weeknight dinners or as crowd-pleasing appetizers.

Ingredients
  

  • 1 lb ground beef (450g)
  • 1/2 cup breadcrumbs
  • 1/3 cup milk
  • 1 large egg
  • 1/2 small onion finely grated or minced
  • 2 cloves garlic minced
  • 1 teaspoon Worcestershire sauce ensure halal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika optional
  • 1 teaspoon dried Italian seasoning or oregano + basil
  • 1 cup mozzarella cheese shredded
  • 1/3 cup Parmesan cheese grated
For the Topping
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 12-count muffin tin or line with paper liners.
  2. In a small bowl, combine breadcrumbs with milk and let soak for 5 minutes.
  3. In a large mixing bowl, combine ground beef, soaked breadcrumbs, egg, minced onion, garlic, Worcestershire sauce, salt, pepper, smoked paprika (if using), Italian seasoning, and Parmesan cheese. Mix gently with hands until just combined.
  4. Scoop about 2 tablespoons of meat mixture into each muffin cup, creating a well in the center.
  5. Place 1 tablespoon of shredded mozzarella in each well, then top with another spoonful of meat mixture, sealing the cheese inside.
  6. Mix ketchup, brown sugar, and mustard to create a glaze. Spread over each meatloaf bite.
  7. Bake for 20-25 minutes until meat is cooked through (160°F internal temperature).

Notes

Use 85% lean ground beef for the best flavor and juiciness. While pre-shredded mozzarella works fine, freshly grated will melt more smoothly. These can be made ahead and reheated. For variation, try different cheese fillings like cheddar or pepper jack, or swap the ground beef for turkey or chicken. The smoked paprika adds a lovely depth of flavor but can be omitted if unavailable.
