Ingredients
  

  • 1 cup unsalted butter softened (226g)
  • 1 cup granulated sugar (200g)
  • ½ cup brown sugar packed (100g)
  • 2 large eggs
  • 2 teaspoons non-alcoholic vanilla extract
  • cups all-purpose flour (280g)
  • ½ cup unsweetened cocoa powder (45g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips (170g)
  • 1 cup dried cherries (150g)

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Gently fold in chocolate chips and dried cherries.
  7. Scoop rounded tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are set but centers still look slightly soft.
  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

You can substitute dried cherries with maraschino cherries (well drained) for a juicier bite. Using high-quality cocoa powder will enhance the chocolate flavor. For variations, try using cranberries instead of cherries, adding white chocolate chips, or incorporating chopped nuts like walnuts or almonds. Store in an airtight container to maintain chewiness.
