- Gather all ingredients: sour cream, chopped cilantro, lime juice, garlic clove, and salt.
- Blend all ingredients together until mostly smooth with tiny flecks of green throughout. Use a food processor, blender, or whisk by hand.
- Taste and adjust seasoning if needed. Add more lime juice or salt as desired.
- If the sauce is too thick, thin it out with 1-2 teaspoons of water or milk to reach desired consistency.
- Chill for 20-30 minutes to allow flavors to meld.
- Stir before serving.
Notes
For a dairy-free version, use plain dairy-free yogurt or substitute with 3/4 cup mayonnaise thinned with water. Can be stored in the refrigerator for up to 5 days. Try variations like adding half an avocado for avocado crema, or 1-2 teaspoons of adobo sauce for chipotle crema. Fresh ingredients, especially cilantro, make a significant difference in the final taste.
