Ingredients
  

  • 1 cup sour cream or Greek yogurt
  • 1/2 cup fresh cilantro chopped, lightly packed
  • 2 tablespoons lime juice
  • 1 lime zest optional, for extra zing
  • 1 small garlic clove
  • 1/4 teaspoon salt or to taste
  • 1-2 teaspoons water or milk optional, for thinning

Method
 

  1. Gather all ingredients: sour cream, chopped cilantro, lime juice, garlic clove, and salt.
  2. Blend all ingredients together until mostly smooth with tiny flecks of green throughout. Use a food processor, blender, or whisk by hand.
  3. Taste and adjust seasoning if needed. Add more lime juice or salt as desired.
  4. If the sauce is too thick, thin it out with 1-2 teaspoons of water or milk to reach desired consistency.
  5. Chill for 20-30 minutes to allow flavors to meld.
  6. Stir before serving.

Notes

For a dairy-free version, use plain dairy-free yogurt or substitute with 3/4 cup mayonnaise thinned with water. Can be stored in the refrigerator for up to 5 days. Try variations like adding half an avocado for avocado crema, or 1-2 teaspoons of adobo sauce for chipotle crema. Fresh ingredients, especially cilantro, make a significant difference in the final taste.
