A nostalgic comfort food favorite featuring crispy-edged fried bologna, melty cheese, and optional crunchy pickles on buttery grilled bread. This humble sandwich delivers big flavor with minimal effort and basic ingredients.

Ingredients
  

  • 6 slices turkey bologna thick-cut preferred
  • 4 slices sandwich bread white, wheat, or brioche
  • 2 tablespoons butter softened
  • 2 slices American cheese or cheddar
  • 2 tablespoons mayonnaise
  • 2 teaspoons yellow mustard optional
  • 4-6 pickle chips optional

Method
 

  1. Spread softened butter on one side of each bread slice.
  2. Heat a skillet over medium heat.
  3. Place bologna slices in the pan and cook for 2-3 minutes until edges curl up and become crispy. Flip and cook the other side until golden.
  4. For assembly, place two slices of fried bologna on one slice of bread (butter-side out), top with cheese, add two more bologna slices, and pickle chips if desired.
  5. Spread mayonnaise and mustard on the inside of the top bread slice and close the sandwich.
  6. Return sandwich to the skillet and grill until bread is golden brown and crispy on both sides, flipping once.
  7. Let rest for 1 minute before cutting and serving.

Notes

Score an 'X' in the center of bologna slices if they puff up during cooking. For variations, try beef or pork bologna, different cheeses like pepper jack or provolone, or add extras like lettuce, tomato, or a fried egg. The sandwich can be made with toasted bread instead of grilling for a quicker version. Serve with potato chips, coleslaw, or a pickle spear for a complete meal.
