Ingredients
  

  • 2 teaspoons olive oil
  • 1 pound ground turkey
  • 2 tablespoons garlic minced
  • 1 cup onion chopped
  • 3 tablespoons paprika
  • 1/2 teaspoon thyme
  • 3 1/2 cups beef broth nonfat
  • 8 ounces egg noodles medium
  • 3/4 cup sour cream fat-free
  • 1 tablespoon flour
  • 3 cups broccoli florets steamed

Method
 

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant and translucent.
  3. Add ground turkey and cook until no longer pink, breaking it up with a wooden spoon. Drain excess fat.
  4. Stir in paprika and thyme, coating the turkey mixture completely.
  5. Pour in beef broth and add uncooked egg noodles. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
  6. In a small bowl, mix sour cream with flour until smooth.
  7. Stir the sour cream mixture into the noodles and simmer for 3 more minutes until sauce thickens.
  8. Steam broccoli florets until bright green and tender-crisp.
  9. Serve the turkey and noodle mixture over the steamed broccoli.

Notes

Use Hungarian paprika for authentic flavor - it comes in sweet and hot varieties. You can substitute regular sour cream or Greek yogurt for the fat-free sour cream. The broccoli can be replaced with green beans or asparagus. For deeper flavor, consider adding a tablespoon of tomato paste or a splash of red wine. The dish pairs well with cucumber salad, crusty rye bread, or roasted root vegetables.
