Ingredients
  

  • 4 boneless skinless chicken breasts about 6 oz each
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded provolone cheese or mozzarella
  • 1/4 cup panko breadcrumbs
  • 3 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon fresh parsley chopped, for garnish (optional)

Method
 

  1. Pound chicken breasts to an even thickness using a meat mallet.
  2. Rub chicken breasts with olive oil on both sides. Season with garlic powder, paprika, Italian seasoning, salt, and black pepper.
  3. Heat a skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden and internal temperature reaches 165°F.
  4. While chicken cooks, combine mayonnaise, sour cream, Parmesan cheese, provolone cheese, and panko breadcrumbs in a bowl.
  5. Transfer cooked chicken to a baking dish and spread the cheese mixture over each piece.
  6. Broil for 1-2 minutes until the topping is golden brown and bubbly, watching carefully to prevent burning.
  7. Garnish with fresh chopped parsley if desired and serve.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. The cheese topping can be made with mozzarella or Swiss cheese if provolone isn't available. Make it gluten-free by using gluten-free panko or crushed rice crackers. The quality of Parmesan cheese makes a big difference - use freshly grated rather than pre-packaged versions for best results.
