Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 1 large egg
  • ½ cup shredded cheddar cheese or parmesan/mozzarella
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Add cottage cheese, egg, shredded cheese, and all seasonings to a blender. Blend until mostly smooth but still slightly textured.
  3. Drop 1-2 tablespoon-sized mounds onto the prepared baking sheet.
  4. Flatten each mound into a thin circle with the back of a spoon. The thinner the chips, the crispier they'll become.
  5. Bake for 20-30 minutes, depending on desired crispness (20 minutes for softer, chewy chips; 28-30 minutes for extra crispy chips).
  6. Let cool completely on the baking sheet before serving.

Notes

You can customize these chips with different seasonings like dried parsley, chili flakes, or everything bagel seasoning. The type of cheese used will affect the flavor - cheddar gives a sharp taste while mozzarella creates a milder chip. Make sure to let them cool completely for the best texture. They're perfect for dipping in guacamole, hummus, or serving alongside soups and salads.
