Ingredients
  

  • 4 eggs beaten
  • 1 cup applesauce
  • 2/3 cup cooking oil
  • 1 can apple pie filling 21 ounce size
  • 3/4 cup brown sugar packed, divided
  • 2 1/2 cups packaged baking mix
  • 1/2 cup all-purpose flour
  • 2 teaspoons apple pie spice
  • 1/2 cup walnuts chopped

Method
 

  1. Preheat oven to 350°F. Thoroughly grease and flour two 8x4x2-inch loaf pans.
  2. In a large bowl, whisk together the packaged baking mix, flour, and apple pie spice until well combined.
  3. In a separate bowl, combine the beaten eggs, apple pie filling, applesauce, 1/2 cup of the brown sugar, and cooking oil.
  4. Pour the wet mixture into the dry ingredients and stir just until moistened. Be careful not to overmix.
  5. Divide the batter evenly between the prepared loaf pans.
  6. Sprinkle each loaf with the remaining 1/4 cup brown sugar and the chopped walnuts.
  7. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pans on a wire rack for 10 minutes, then remove from pans and allow to cool completely.
  9. For best results, wrap the completely cooled bread and store overnight before slicing.
