Ingredients
  

  • 2 1/2 cups packaged baking mix
  • 1/2 cup all-purpose flour
  • 2 teaspoons apple pie spice
  • 4 eggs beaten
  • 21 ounce can apple pie filling
  • 1 cup applesauce
  • 3/4 cup brown sugar packed, divided
  • 2/3 cup cooking oil
  • 1/2 cup walnuts chopped

Method
 

  1. Preheat oven to 350°F. Thoroughly grease and flour two 8x4x2-inch loaf pans.
  2. In a large bowl, whisk together the packaged baking mix, flour, and apple pie spice until well combined.
  3. In a separate bowl, combine the beaten eggs, apple pie filling, applesauce, 1/2 cup of the brown sugar, and cooking oil.
  4. Pour the wet mixture into the dry ingredients and stir just until moistened. Be careful not to overmix.
  5. Divide the batter evenly between the prepared loaf pans.
  6. Sprinkle each loaf with the remaining 1/4 cup brown sugar and the chopped walnuts.
  7. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pans on a wire rack for 10 minutes, then remove from pans and allow to cool completely.
  9. For best results, wrap the completely cooled bread and store overnight before slicing.

Notes

This bread actually tastes even better the day after baking, as the flavors have time to meld and the texture sets perfectly. For cleaner slices, allow the bread to rest overnight before cutting. If you don't have apple pie spice, you can make your own by combining cinnamon, nutmeg, and a pinch of allspice. The walnuts add wonderful texture but can be omitted for those with nut allergies. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. This bread also freezes beautifully for up to 3 months.
