Ingredients

Stuffing Balls
  • 2 cups bread crumbs
  • 1 cup cooked turkey shredded
  • 1/2 cup dried cranberries chopped
  • 1/2 cup onion finely diced
  • 1/2 cup celery diced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup halal chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg

Equipment

  • Large mixing bowl
  • Baking sheet
  • Parchment paper
  • Measuring cups and spoons
  • Spoon or cookie scoop
  • Knife
  • Cutting board

Method

  1. Set your oven to 375°F (190°C) and prepare a baking sheet with parchment paper so the stuffing balls won’t stick.
  2. In a large bowl, mix together bread crumbs, shredded turkey, chopped dried cranberries, diced onion, diced celery, and chopped parsley until evenly combined.
  3. Add dried thyme, salt, and black pepper to the bowl. Pour in the chicken broth and crack in the egg. Stir well so the mixture comes together and holds its shape when pressed.
  4. Portion out about two tablespoons of the mixture for each ball. Form into even balls with your hands and arrange them spaced out on the lined baking sheet.
  5. Bake for 25 minutes, or until the stuffing balls are golden and fully cooked through. Let them cool slightly before serving.
  6. Serve the stuffing balls warm. Enjoy plain, or pair with gravy or cranberry sauce, if you like.

Notes

Rotisserie chicken can be substituted for turkey with no changes to method or measurements. If the mixture feels too dry, add an extra tablespoon of broth; if it’s too wet, mix in a bit more bread crumbs. The balls can be shaped up to a day ahead and chilled before baking, or frozen either before or after baking for longer storage. For best results, reheat oven-style to keep the exterior crisp. Enjoy these as a savory snack, appetizer, or even as part of a holiday meal platter.
