  • 1 clove garlic sliced
  • ¼ cup mayonnaise preferably full-fat
  • ¼ teaspoon salt
  • Freshly cracked black pepper for garnish
  • 5 cups cauliflower florets cut into equal sizes
  • quarts water for steaming

Method
 

  1. Place cauliflower florets and sliced garlic in a steamer basket over 1½ quarts of water.
  2. Steam for approximately 15 minutes, or until the cauliflower is fork-tender.
  3. Drain the cauliflower and garlic thoroughly to remove excess water.
  4. Transfer the steamed cauliflower and garlic to a food processor.
  5. Add mayonnaise and salt to the food processor.
  6. Process until the mixture reaches your desired consistency, from silky smooth to slightly textured.
  7. Taste and adjust seasoning if needed.
  8. Serve hot, garnished with freshly cracked black pepper.

Notes

For a dairy-free version, substitute the mayonnaise with coconut cream or your favorite plant-based alternative. Greek yogurt can also work as a lighter option, though it will add a slight tanginess.
Try enhancing the flavor with fresh herbs like chives, rosemary, or thyme for a more elevated dish. Roasted garlic can be used instead of steamed for deeper flavor notes.
