- Place cauliflower florets and sliced garlic in a steamer basket over 1½ quarts of water.
- Steam for approximately 15 minutes, or until the cauliflower is fork-tender.
- Drain the cauliflower and garlic thoroughly to remove excess water.
- Transfer the steamed cauliflower and garlic to a food processor.
- Add mayonnaise and salt to the food processor.
- Process until the mixture reaches your desired consistency, from silky smooth to slightly textured.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with freshly cracked black pepper.
Notes
For a dairy-free version, substitute the mayonnaise with coconut cream or your favorite plant-based alternative. Greek yogurt can also work as a lighter option, though it will add a slight tanginess.
Try enhancing the flavor with fresh herbs like chives, rosemary, or thyme for a more elevated dish. Roasted garlic can be used instead of steamed for deeper flavor notes.
This dish pairs beautifully with roasted chicken, grilled steak, or crispy-skinned fish. Store leftovers in an airtight container in the refrigerator for up to 3 days.
