- Slice each chicken breast in half horizontally to form thinner cutlets. Season both sides with salt, pepper, and garlic powder, then lightly dredge the chicken in flour, shaking off the excess.
- Heat the olive oil and butter in a skillet over medium-high heat. When hot, arrange the chicken in a single layer and cook for 4β5 minutes per side, until nicely golden. Remove chicken from the pan and set aside.
- Add the chicken broth and Dijon mustard to the skillet. Scrape the bottom to loosen any browned bits, and let the mixture simmer for 1β2 minutes.
- Pour in the heavy cream, then stir in the spinach and sun-dried tomatoes. Return the chicken to the skillet, nestling it into the sauce. Cook for 5 minutes or until the chicken is cooked through and the sauce thickens slightly.
