Ingredients

For the Chicken and Coating
  • 4 boneless, skinless chicken breasts
  • 1/2 cup dill pickle juice
  • 1/2 cup diced dill pickles
  • 1/2 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • cooking oil spray
  • cayenne pepper optional, a pinch

Equipment

  • Baking sheet
  • Parchment paper or cooking spray
  • Shallow mixing bowl
  • Second bowl
  • Measuring cups and spoons
  • Meat thermometer

Method

  1. Set the oven to 400°F (200°C) and line a baking sheet or coat it lightly with oil to prevent sticking.
  2. In a shallow bowl, combine the dill pickle juice, diced pickles, garlic powder, onion powder, and a bit of salt and pepper.
  3. Dip each chicken breast into the pickle mixture, making sure it's coated on all sides.
  4. Mix the breadcrumbs with grated parmesan cheese in another bowl. If using, stir in a pinch of cayenne pepper.
  5. Press the chicken breasts, one at a time, into the breadcrumb-parmesan mixture, coating them well.
  6. Arrange the coated chicken on the prepared baking sheet, leaving space between the pieces. Lightly spray the tops with cooking oil.
  7. Bake for 20–25 minutes, until the coating is crisp and golden and the chicken reaches an internal temperature of 165°F (75°C).

Notes

For the best crunch, use panko breadcrumbs, and be sure to leave space between chicken breasts so air can circulate as they bake. Chicken thighs can be substituted for breasts; just increase the baking time slightly and check for doneness. Store leftovers in an airtight container in the fridge for up to three days; reheat them in the oven to help restore crispiness. For a gluten-free option, swap the breadcrumbs with a gluten-free alternative. Serve with roasted potatoes, a fresh salad, or crunchy coleslaw.
