  • 1 tablespoon olive oil
  • 1/4 teaspoon cayenne pepper
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 2 teaspoons spicy brown mustard Gulden's recommended
  • 1/2 cup Italian breadcrumbs
  • 4 chicken breasts
  • 2-3 tablespoons butter
  • 1 tablespoon lemon juice
  • 10 ounce fresh spinach washed and chopped
  • 1/4 cup fresh basil minced
  • 2 tablespoons mayonnaise

Method
 

  1. Preheat the oven to 400°F.
  2. Generously butter a baking dish using 2-3 tablespoons of butter.
  3. Spread the chopped fresh spinach across the bottom of the baking dish and drizzle with lemon juice.
  4. In a small bowl, combine the minced fresh basil, minced garlic, spicy brown mustard, mayonnaise, olive oil, and soy sauce to create an herb spread.
  5. Pat the chicken breasts dry and place them on top of the spinach layer.
  6. Generously coat each chicken breast with the herb mixture.
  7. Sprinkle the Italian breadcrumbs evenly over the coated chicken breasts.
  8. Dust the breadcrumb layer with cayenne pepper for a subtle heat.
  9. Bake for 20-25 minutes, until the chicken juices run clear and the breadcrumbs have turned golden brown and crispy.
