Ingredients
  

  • 2 6-ounce salmon fillets skin-on
  • 2 tablespoons olive oil divided
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1 garlic clove sliced

Method
 

  1. In a bowl, combine 1 tablespoon olive oil, salt, black pepper, sliced garlic, lemon juice, and chopped fresh dill.
  2. Add salmon fillets to the marinade and let sit at room temperature for 15 minutes.
  3. Preheat a large skillet over medium heat for about 2 minutes.
  4. Add the remaining tablespoon of olive oil to the hot skillet.
  5. Place salmon fillets skin-side down in the skillet.
  6. Cook undisturbed for 5 minutes per side, until the skin is crispy and golden, and the salmon flakes easily with a fork.
  7. Serve with lemon wedges on the side.

Notes

Make sure to pat the salmon fillets completely dry before cooking to achieve the crispiest skin. You can substitute dried dill for fresh, using about one-third of the amount. The salmon is perfectly cooked when it flakes easily with a fork while remaining moist inside. For best results, let the salmon come to room temperature before cooking and don't move it while it's cooking to ensure even browning.
