Method
- Warm the olive oil in a skillet over medium heat. Sauté the chopped onion and poblano pepper for 3–4 minutes, or until softened.
- Move the sautéed vegetables to the Crockpot. Add chicken breast, diced tomatoes with green chiles, black beans, corn, chicken stock, bay leaf, cumin, chili powder, paprika, garlic powder, cayenne, salt, and pepper. Make sure all chicken stock and sour cream used are halal certified if needed.
- Cover and let cook on high for 3 hours or on low for 6 hours, until the chicken is cooked through.
- Take out the chicken breasts and shred them with two forks. Return the shredded chicken to the Crockpot.
- Add the sour cream and, if using, the shredded cheddar. Stir until well mixed.
- Continue cooking on low for 30 more minutes so the soup becomes creamy.
- Serve hot, and top each bowl with your choice of tortilla strips, cotija cheese, lime, cilantro, and sliced jalapeño.

Notes
For a dairy-free version, swap the sour cream with coconut or cashew-based alternatives and omit the cheddar. If you'd like to use chicken thighs instead of breast, they will remain more tender and add extra richness. Taste the soup before serving to adjust spices as needed, since slow cooking can mellow flavors. Add crunchy toppings right before eating to prevent them from getting soggy. To store, refrigerate leftovers up to 4 days or freeze the soup before adding dairy; reheat the base, then stir in fresh sour cream and cheese just before serving for the best texture.
