Ingredients
  

For the Salad
  • 1/2 pound cooked white chicken meat
  • 6 cups shredded head lettuce or romaine lettuce
  • 1/4 cup green onions finely chopped
  • 2 tablespoons almonds finely chopped and toasted
  • 2 tablespoons sesame seeds toasted
  • 1 cup crispy chow mein noodles
For the Dressing
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon ajinomoto (MSG) optional
  • 1/2 teaspoon black pepper
  • 1/4 cup peanut oil
  • 3 tablespoons rice vinegar

Method
 

  1. In a large salad bowl, combine the shredded lettuce, cooked chicken meat, and chopped green onions.
  2. Add the toasted almonds and toasted sesame seeds to the bowl.
  3. In a small bowl, whisk together sugar, salt, ajinomoto (if using), black pepper, peanut oil, and rice vinegar until well combined.
  4. Just before serving, add the crispy chow mein noodles to the salad.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve immediately for the best texture and flavor.

Notes

For the best results, add the chow mein noodles just before serving to maintain their crunch. The salad components can be prepped ahead and stored separately until ready to serve. Rotisserie chicken works great as a time-saver. You can substitute almonds with cashews or peanuts, and try crispy wonton strips instead of chow mein noodles. The salad can also be made vegetarian by replacing chicken with tofu or edamame.
