Ingredients
  

  • 2 cups cooked chicken breasts cubed
  • 11 ounce whole kernel corn 1 can, drained
  • 1 cup salsa
  • 1 cup cheddar cheese shredded
  • 8 flour tortillas 6-inch, warmed
  • sour cream for serving (optional)

Equipment

  • Saucepan or microwave-safe bowl
  • Toothpicks (optional)

Method
 

  1. Combine cubed cooked chicken, drained corn, and salsa in a saucepan or microwave-safe bowl.
  2. Heat the mixture until warmed through.
  3. Lay out the warmed tortillas and sprinkle each with shredded cheddar cheese.
  4. Spoon about ½ cup of the warm chicken mixture down the center of each tortilla.
  5. Roll each tortilla up snugly. Secure with toothpicks if desired.
  6. Serve with sour cream on the side.

Notes

These wraps are incredibly versatile - feel free to customize with different proteins, cheeses, or add-ins like bell peppers, jalapeños, or avocado. They're perfect for using leftover chicken or rotisserie chicken. Make sure not to overfill the tortillas to prevent them from falling apart. These wraps can be made ahead and are great for lunch boxes. For best results, warm the tortillas before assembling to help the cheese melt slightly.
