Ingredients
  

  • 3 cups frozen hash brown potatoes thawed
  • 1 cup turkey ham diced
  • 1/2 cup green onions sliced (about 4)
  • 1 cup cheddar cheese shredded
  • 4 large eggs
  • 12 oz evaporated milk (1½ cups)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried mustard optional

Method
 

  1. Preheat oven to 350°F and grease a 2-quart baking dish with cooking spray or butter.
  2. Spread thawed hash brown potatoes evenly across the bottom of the dish.
  3. Layer the diced turkey ham and sliced green onions over the potatoes.
  4. Sprinkle shredded cheddar cheese over the ham and onions.
  5. In a separate bowl, whisk together eggs, evaporated milk, salt, black pepper, and dried mustard (if using).
  6. Pour the egg mixture evenly over the layers in the baking dish.
  7. Bake uncovered for 50-60 minutes, or until a knife inserted near the center comes out clean and the top is golden.
  8. Let rest for 5-10 minutes before serving.

Notes

This casserole can be prepped the night before and baked in the morning. Make sure hash browns are fully thawed to prevent excess water. You can substitute regular ham for turkey ham, and experiment with different cheese varieties like Swiss or Monterey Jack. For a vegetarian version, try sautéed mushrooms instead of ham. The dried mustard is optional but adds a nice depth of flavor.
