Ingredients
  

  • 1 chuck roast
  • 2 carrots chopped
  • 2 potatoes chopped
  • 2 stalks celery chopped
  • 2 cups water
Seasonings
  • 1 to taste salt
  • 1 to taste black pepper
  • 1 to taste garlic powder
  • 1 to taste onion powder
  • 1 to taste rosemary
  • 1 to taste thyme

Method
 

  1. Place chuck roast in the crockpot.
  2. Add 2 cups of water and season with your chosen dry ingredients (salt, pepper, herbs, and spices).
  3. Cook on low for 8 hours overnight.
  4. Add chopped carrots, potatoes, and celery around the partially cooked roast.
  5. Continue cooking on low for another 10-12 hours.
  6. Transfer the roast to a serving platter, arrange vegetables around it, and spoon cooking liquid over the top before serving.

Notes

Look for a chuck roast with good marbling throughout for the best results. The cooking time is long but necessary to achieve that fork-tender texture. You can substitute red wine for water for added flavor. The vegetables can be customized based on preference - try parsnips, turnips, or mushrooms. The cooking liquid can be reduced on the stovetop for a more concentrated sauce.
