Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 3/4 cup whole milk or 2% milk
  • 1 large egg
  • 1/2 teaspoon vanilla extract non-alcoholic
  • vegetable or canola oil for frying
  • powdered sugar for dusting

Method
 

  1. In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar.
  2. In a separate bowl, combine milk, egg, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and whisk until you have a smooth batter (similar to pancake batter consistency).
  4. Heat about 2 inches of oil in a deep skillet or pot until it reaches 350°F (175°C).
  5. Carefully drop tablespoon-sized portions of batter into the hot oil. Don't overcrowd the pan.
  6. Fry for about 1-2 minutes per side until golden brown.
  7. Remove with a slotted spoon and place on paper towels to drain excess oil.
  8. While still warm, generously dust with powdered sugar.
  9. Serve immediately.

Notes

For the best results, maintain oil temperature at 350°F - too cool and they'll be greasy, too hot and they'll burn outside while staying raw inside. The batter should be similar to pancake batter consistency. These can be made gluten-free using gluten-free flour, or dairy-free using almond milk. Try adding cinnamon or lemon zest to the batter for variation. Serve with chocolate sauce, fresh berries, or vanilla ice cream for extra indulgence.
