- In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar.
- In a separate bowl, combine milk, egg, and vanilla extract.
- Pour the wet mixture into the dry ingredients and whisk until you have a smooth batter (similar to pancake batter consistency).
- Heat about 2 inches of oil in a deep skillet or pot until it reaches 350°F (175°C).
- Carefully drop tablespoon-sized portions of batter into the hot oil. Don't overcrowd the pan.
- Fry for about 1-2 minutes per side until golden brown.
- Remove with a slotted spoon and place on paper towels to drain excess oil.
- While still warm, generously dust with powdered sugar.
- Serve immediately.
Notes
For the best results, maintain oil temperature at 350°F - too cool and they'll be greasy, too hot and they'll burn outside while staying raw inside. The batter should be similar to pancake batter consistency. These can be made gluten-free using gluten-free flour, or dairy-free using almond milk. Try adding cinnamon or lemon zest to the batter for variation. Serve with chocolate sauce, fresh berries, or vanilla ice cream for extra indulgence.
