Ingredients
  

  • 1 9-inch refrigerated pie crust
  • 6 strips turkey bacon
  • 1 large sweet onion thinly sliced
  • 3 medium ripe tomatoes sliced (about 2 cups)
  • 1 cup cheddar cheese shredded
  • ½ cup mozzarella cheese shredded
  • ½ cup mayonnaise
  • 2 tablespoons fresh basil chopped (or 1 teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Fit pie crust into a 9-inch pie pan and par-bake for 8 minutes.
  3. Cook turkey bacon in a skillet over medium heat until crisp.
  4. Using the bacon drippings, sauté the thinly sliced onion until soft and golden, about 7 minutes.
  5. Layer half of the tomato slices in the cooled crust, followed by the caramelized onions and crumbled turkey bacon, then add remaining tomato slices.
  6. In a bowl, combine shredded cheddar, mozzarella, mayonnaise, basil, salt, and pepper.
  7. Spread the cheese mixture over the layered ingredients.
  8. Bake at 375°F for 20-25 minutes, or until cheese is melted and beginning to brown.

Notes

For best results, use high-quality cheese as it melts better and provides richer flavor. Fresh basil is preferred over dried for the best aromatic flavor. You can substitute regular bacon for turkey bacon if desired. The sandwich can be made vegetarian by omitting the bacon, or vegan by using plant-based cheese and mayo. Try different cheese varieties like gouda, gruyère, or pepper jack for different flavor profiles.
