Ingredients

  • 2 lobster tails 6-8 oz each
  • 4 tablespoons unsalted butter melted
  • 2 cloves garlic finely minced
  • 1 teaspoon lemon juice fresh-squeezed
  • 1 teaspoon parsley chopped, fresh or dried
  • 1/4 teaspoon paprika
  • salt and black pepper to taste
  • lemon wedges for serving

Equipment

  • Kitchen shears
  • Baking sheet
  • Aluminum foil
  • Small bowl
  • Pastry brush

Method

  1. Using kitchen shears, cut along the top of each lobster shell down the center, stopping at the tail.
  2. Gently lift the meat to rest on top of the shell while keeping it attached at the base.
  3. Pat the meat dry with paper towels.
  4. In a small bowl, combine melted butter, minced garlic, lemon juice, parsley, paprika, salt, and pepper.
  5. Preheat the broiler to 500°F.
  6. Place lobster tails on a foil-lined baking sheet and brush with half of the garlic butter mixture.
  7. Broil 5-6 inches from heat source for 8-10 minutes, brushing with remaining garlic butter halfway through cooking.
  8. Lobster is done when meat is opaque and slightly golden-brown on top.
  9. Serve with lemon wedges.

Notes

For best results, use fresh lobster tails that smell briny (never fishy). Fresh garlic and lemon juice provide better flavor than pre-minced garlic or bottled lemon juice. The lobster tails can also be grilled instead of broiled. Make extra garlic butter sauce for dipping bread. Pairs wonderfully with mashed potatoes, rice pilaf, roasted asparagus, or Caesar salad.
