- Preheat oven to 375°F (190°C).
- In a small bowl, combine honey, soy sauce, olive oil, garlic powder, and black pepper. Stir well until thoroughly mixed.
- Prepare a 9×13-inch baking pan by either spraying with non-stick cooking spray or lining with foil.
- Rinse chicken pieces under cold water and pat dry with paper towels.
- Arrange chicken pieces in the prepared baking pan.
- Pour marinade over the chicken, ensuring each piece is well coated.
- Bake uncovered for about 1 hour, or until chicken is golden brown and cooked through.
Notes
You can prepare the marinade ahead of time and refrigerate for up to 24 hours. For a gluten-free version, substitute tamari for soy sauce. Chicken thighs can be used instead of breasts for juicier results. Don't discard the pan juices - they make an excellent sauce for serving over rice or bread. Use a darker, local honey for more complex flavor notes if available.
