Ingredients

For the Salad
  • 1 15-ounce can garbanzo beans rinsed and drained
  • 1 15-ounce can cannellini beans rinsed and drained
  • 1/2 medium English cucumber diced (or use 4-5 Persian cucumbers)
  • 1 red bell pepper cored and diced
  • 1 orange bell pepper cored and diced
  • 2 cups cherry tomatoes sliced in half
  • 3/4 cup kalamata olives chopped
  • 1/4 cup red onion diced
  • 1/2 cup fresh Italian parsley minced
  • 1/4 cup fresh mint minced
For the Dressing
  • 3/4 cup extra-virgin olive oil
  • 1/4 cup apple cider vinegar or white grape vinegar
  • 2 tablespoons lemon juice
  • zest of 1/2 lemon
  • 2 cloves garlic minced
  • 1-2 tablespoons water
  • 3 tablespoons nutritional yeast or finely grated Halal hard cheese alternative like Pecorino Romano (if available and certified Halal)
  • 2 teaspoons dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon red pepper
  • 1/4 teaspoon ground black pepper

Equipment

  • Blender or NutriBullet
  • Fine mesh colander
  • Large mixing bowl
  • Cutting board
  • Knife

Method

  1. In a blender or NutriBullet, combine olive oil, vinegar, lemon juice, lemon zest, minced garlic, water, nutritional yeast (or finely grated Halal hard cheese), oregano, sea salt, red pepper, and black pepper. Blend for 5-10 seconds, or until smooth and the yeast or cheese is fully broken down.
  2. Place the garbanzo beans and cannellini beans in a fine mesh colander. Rinse under cold water to remove canned flavor and let drain thoroughly.
  3. Prepare the vegetables and herbs: halve the cherry tomatoes, dice the cucumber, red onion, red bell pepper, and orange bell pepper, chop the kalamata olives, and mince the parsley and mint.
  4. Combine the drained beans, prepared vegetables, olives, and fresh herbs in a large mixing bowl.
  5. Pour the blended dressing over the salad ingredients and gently toss until evenly coated. Taste and season with additional salt and freshly ground black pepper if desired.
  6. Store the salad in an airtight container (or divide among individual containers) and refrigerate. It will keep for up to 5 days.

Notes

This salad is easily made vegan by using nutritional yeast instead of cheese in the dressing. For the best texture, thoroughly drain and rinse your beans to avoid excess liquid. The salad develops even more flavor after a few hours in the fridge and stays fresh for up to five days. If making ahead for meal prep, portion into individual containers for quick lunches. Do not freeze, as the fresh vegetables may become mushy. Serve cold or at room temperature, and pair with pita, flatbread, or grilled proteins for a more substantial meal.
