Ingredients
  

  • 2 cups pasta (any short variety) cooked until al dente
  • 4 ounces Italian cheese blend shredded
  • 1 pound ground beef
  • 1 cup sour cream
  • 3 cloves garlic minced
  • 4 ounces Tostitos spicy queso supreme
  • 1 (10 ounce) can cream of mushroom soup

Method
 

  1. Preheat your oven to 350°F.
  2. In a large skillet, brown the ground beef with minced garlic, breaking the meat into small crumbles as it cooks.
  3. While the beef cooks, prepare pasta according to package directions until just al dente (slightly undercooked).
  4. In a large mixing bowl, combine sour cream, cream of mushroom soup, and Tostitos spicy queso supreme.
  5. Drain the cooked beef and pasta well, then add both to the creamy mixture.
  6. Gently fold everything together until all ingredients are evenly coated.
  7. Transfer the mixture to a casserole dish and sprinkle the Italian cheese blend evenly over the top.
  8. Bake for 30 minutes until bubbling and golden on top.

Notes

For a lighter version, substitute ground turkey or chicken for the beef. Feel free to add diced bell peppers or spinach when browning the meat for extra vegetables. The casserole can be assembled ahead of time and refrigerated until ready to bake - just add 5-10 minutes to the baking time if cooking from cold.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or return to the oven covered with foil until heated through.
