Ingredients

  • 1 teaspoon salt
  • 2 packets Stevia Truvia sweetener approximately 1 gram
  • Pam cooking spray or another light cooking spray
  • 1/4 cup unpopped popcorn kernels

Equipment

  • Air popper
  • Large bowl
  • Jelly roll pan

Method

  1. Measure 1/4 cup of unpopped popcorn kernels and pour them into your air popper.
  2. Position a large bowl at the popper's spout to catch the popcorn as it pops.
  3. Once all kernels have popped, immediately spread the popcorn onto a jelly roll pan for even distribution of flavoring.
  4. While the popcorn is still hot, lightly mist with Pam cooking spray—just enough to create a subtle stickiness without making it soggy.
  5. Sprinkle 2 packets of Stevia Truvia and 1 teaspoon of salt evenly across the warm popcorn.
  6. Once cool enough to touch, gently toss everything together with your hands to ensure every piece gets coated with the sweet and salty mixture.

Notes

For best results, use fresh popcorn kernels as they pop more completely with fewer unpopped kernels. This kettle corn is best enjoyed immediately, but can be stored in an airtight container for up to 2 days (though it may lose some crispness). For variations, try adding a sprinkle of cinnamon or pumpkin pie spice for a seasonal twist, or substitute nutritional yeast for the sweetener if you prefer a savory, cheesy flavor.
