- In a bowl, mix together the diced cucumber, red onion, and sliced kalamata olives for the salsa. Add chopped dill and parsley, then season with salt, pepper, and a squeeze of lemon juice. Stir well and place in the refrigerator to chill.
- In another bowl, combine the coconut yogurt, diced cucumber, dill, garlic powder, a pinch of salt, and lemon juice to make the tzatziki. Stir until creamy and set in the fridge to chill.
- Warm olive oil in a large pan over medium heat. Add the ground chicken and cook, breaking it apart until fully cooked.
- Sprinkle cooked chicken with garlic powder, onion powder, dried oregano, dill, parsley, salt, pepper, and lemon juice. Stir to coat the chicken thoroughly with the seasonings.
- Divide your choice of rice or cauliflower rice among 4 bowls. Add a portion of seasoned chicken to each. Top with Greek salsa and a generous spoonful of tzatziki. Serve right away.

Notes
For best flavor, chill both the salsa and tzatziki for at least 10 minutes before serving. Rice or cauliflower rice can be made ahead or use pre-cooked versions for convenience. If meal prepping, store each component in a separate airtight container and assemble the bowls just before eating. Ground turkey makes a great substitute for chicken; for dairy-based tzatziki, use Greek yogurt instead of coconut yogurt. Leftovers will keep for up to 4 days in the refrigerator.
