  • 1 cup red wine medium-bodied preferred
  • pounds beef stew meat cubed
  • 16 ounces homestyle egg noodles
  • cups beef broth or vegetable broth
  • ¼ cup all-purpose flour
  • ¾ cup onion chopped
  • 3 cloves garlic minced
  • teaspoons dried marjoram
  • ¼ teaspoon black pepper
  • 1 tablespoon cooking oil

Method
 

  1. Heat cooking oil in a large dutch oven over medium heat.
  2. Toss beef stew meat with all-purpose flour until evenly coated.
  3. Brown the meat in batches, removing each batch before starting the next. Set aside.
  4. Add chopped onion and minced garlic to the same pot, scraping up the flavorful brown bits from the bottom.
  5. Return all the meat to the pot, then pour in beef broth and red wine. Add dried marjoram and black pepper.
  6. Bring everything to a boil, then reduce to a simmer and cover for about 1½ to 2 hours until the beef is fall-apart tender.
  7. Remove the tender beef with a slotted spoon and shred it while adding the egg noodles directly to the simmering broth.
  8. Return the shredded beef to join the noodles, and let everything cook together, uncovered, for about 30 minutes until noodles are tender and sauce thickens.
  9. If the mixture becomes too dry during cooking, add a splash more broth or water as needed.

Notes

For the best flavor, choose well-marbled stew meat as the fat renders during cooking, adding richness to the broth. This dish tastes even better the next day, so don't hesitate to make it ahead of time. Store leftovers in an airtight container in the refrigerator for up to 3 days.
