Ingredients
  

  • 1 tablespoon soy sauce
  • 1 teaspoon Tabasco sauce
  • 2 cups corn fresh or frozen
  • 1 onion chopped
  • 1 teaspoon sugar
  • 3 tomatoes peeled and diced
  • 1 pound ham diced
  • 1 teaspoon salt
  • 2 potatoes peeled and diced
  • water or broth enough to cover ingredients

Method
 

  1. Gather all ingredients: diced ham, chopped onion, corn, peeled and diced tomatoes, peeled and diced potatoes, and seasonings (soy sauce, sugar, salt, and Tabasco sauce).
  2. Place all ingredients in your slow cooker.
  3. Add enough water or broth (chicken broth recommended for extra flavor) to cover all ingredients.
  4. Cover the slow cooker and set to low heat.
  5. Cook for 8 hours, stirring occasionally if possible.
  6. Check liquid levels throughout cooking and add more water if needed to keep ingredients covered.
  7. Serve hot with your choice of sides.

Notes

For a creamier version, stir in some half-and-half before serving. This soup keeps beautifully for 3-4 days in the refrigerator and actually tastes even better as leftovers. Feel free to customize with additional vegetables like spinach or swap potatoes for sweet potatoes for a different flavor profile. If you prefer less heat, reduce or omit the Tabasco sauce.
Excellent served with cornbread, crusty sourdough, or grilled cheese sandwiches for dipping.
