Method
- Gather all ingredients: diced ham, chopped onion, corn, peeled and diced tomatoes, peeled and diced potatoes, and seasonings (soy sauce, sugar, salt, and Tabasco sauce).
- Place all ingredients in your slow cooker.
- Add enough water or broth (chicken broth recommended for extra flavor) to cover all ingredients.
- Cover the slow cooker and set to low heat.
- Cook for 8 hours, stirring occasionally if possible.
- Check liquid levels throughout cooking and add more water if needed to keep ingredients covered.
- Serve hot with your choice of sides.
Notes
For a creamier version, stir in some half-and-half before serving. This soup keeps beautifully for 3-4 days in the refrigerator and actually tastes even better as leftovers. Feel free to customize with additional vegetables like spinach or swap potatoes for sweet potatoes for a different flavor profile. If you prefer less heat, reduce or omit the Tabasco sauce.
Excellent served with cornbread, crusty sourdough, or grilled cheese sandwiches for dipping.
