  • 3 cups water
  • 8 ounces angel hair pasta uncooked
  • 1 pound boneless skinless chicken breast cut into bite-size pieces
  • 1 (1¼ ounce) onion soup mix envelope
  • 8 ounces sour cream regular or fat-free
  • 2 tablespoons chives chopped
  • cooking spray for the crock pot

Equipment

  • Slow cooker
  • Cooking spray
  • Measuring cups and spoons

Method

  1. Spray the inside of your slow cooker with cooking spray to prevent sticking.
  2. Add the bite-sized chicken pieces, onion soup mix, water, minced garlic, sliced mushrooms, sour cream, and chopped chives to the crock pot.

  5. About 10 minutes before serving, add the uncooked angel hair pasta to the hot mixture and stir gently.
  6. Replace the lid and let cook for about 10 minutes until the pasta is tender.
  7. Serve immediately while hot.

Notes

For a creamier sauce, you can add more sour cream just before serving. Greek yogurt makes a great substitute if you're looking for a tangier flavor with added protein. The leftovers store well in the refrigerator for up to 3 days - the pasta will absorb more of the sauce, so you might want to add a splash of milk when reheating.
This recipe is quite flexible - feel free to add vegetables like spinach or bell peppers in the last 30 minutes of cooking for added nutrition and color.
