Hillbilly Pie is a supremely simple Southern dessert made from self-rising flour, canned fruit pie filling, and melted butter. With minimal prep and everyday pantry staples, it bakes up into a golden, tender-crusted treat that’s somewhere between a cobbler and a pudding cake. Flexible and quick, it’s perfect for satisfying a weeknight sweet tooth and is best served warm with a scoop of ice cream.

Ingredients

Hillbilly Pie
  • 1 stick unsalted butter (½ cup)
  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • 1 cup milk
  • 1 can fruit pie filling 12 oz, such as cherry, apple, peach, or your favorite

Equipment

  • 8×8-inch casserole dish
  • Mixing bowl
  • Whisk
  • Measuring cups

Method

  1. Set your oven to preheat at 350°F (175°C).
  2. Put the stick of butter in an 8×8-inch casserole dish and place the dish in the oven. Let the butter melt completely as the oven preheats.
  3. In a bowl, mix together the self-rising flour, granulated sugar, and milk, whisking until the batter becomes smooth with no lumps.
  4. Once the butter is melted, remove the casserole dish from the oven. Gently pour the batter evenly over the melted butter, making sure not to stir or mix the layers.
  5. Evenly spoon the pie filling over the top of the batter, distributing it without mixing.
  6. Transfer the dish back to the oven and bake for 30 minutes, or until the top crust turns golden brown.
  7. Let the pie cool for a few minutes before serving. Enjoy warm, either plain or topped with a scoop of ice cream.

Notes

You can use nearly any canned fruit pie filling you like, or swap in homemade filling thickened with a bit of cornstarch and sugar. For a gluten-free option, substitute gluten-free self-rising flour, but expect the texture to vary slightly. Letting the pie rest for at least 10 minutes after baking helps the layers set for easier slicing. Store covered in the refrigerator for up to 3 days; reheat individual portions in the microwave or warm the whole dish in a 300°F oven. Hillbilly Pie is especially delicious served warm with vanilla ice cream or whipped cream, but also tastes great cold.
