Method
 

  1. Gather all ingredients and ensure there are no lumps in the dry ingredients.
  2. In a mixing bowl, whisk together the nonfat dry milk powder, unsweetened cocoa powder, powdered sugar, and fine sea salt until well combined.
  3. If using, add the cornstarch and incorporate thoroughly. This helps prevent clumping during storage and creates a silkier texture.
  4. For an extra smooth texture, pulse the mixture in a food processor for 10-15 seconds to break down any remaining lumps.
  5. Transfer the finished mix to a clean, dry, airtight container for storage.
  6. To serve, whisk about 3 tablespoons of mix into 1 cup of hot milk until smooth and completely dissolved.

Notes

This mix will keep in an airtight container for up to 3 months. For a richer hot chocolate, increase the amount of mix per cup of milk. The mix works best with hot milk, but water can be used in a pinch, especially if you've added cornstarch.
For delicious variations, try adding 1/2 teaspoon of cinnamon for a Mexican-style hot chocolate, or crushed candy canes for a peppermint version. Add 1-2 tablespoons of instant coffee to create a mocha mix.
For gifting, layer the mix with mini marshmallows in a clear jar and attach preparation instructions.
