Ingredients

  • ¼ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon plus extra for dusting
  • tablespoons brown sugar packed, light or dark
  • 1 cup milk dairy, oat, or almond
  • 2 shots espresso or ½ cup strong brewed coffee, cooled
  • Ice

Equipment

  • Small saucepan
  • Tall glass
  • Measuring spoons

Method

  1. In a small saucepan, gently heat the milk with brown sugar and ground cinnamon until the sugar completely dissolves. Do not boil.
  2. Remove from heat and stir in the vanilla extract. Allow the mixture to cool slightly for 1-2 minutes.
  3. Fill a tall glass with ice (more ice makes for a colder, less diluted drink).
  4. Pour the spiced milk mixture over the ice.
  5. Add the espresso shots or cooled strong coffee to the glass.
  6. Stir well to combine all ingredients.
  7. Finish with a light dusting of cinnamon on top.

Notes

For a no-heat version, add your espresso or coffee to a jar with the brown sugar, cinnamon, and 2-3 ice cubes, then shake vigorously until slightly foamy and the sugar dissolves. Strain over fresh ice, add milk and vanilla, then stir.
For a hot version, simply skip the ice and use warm milk and freshly brewed coffee or espresso.
For an Instagram-worthy presentation, try rimming your glass with cinnamon sugar or pouring the milk slowly over the back of a spoon to create beautiful layers.
This latte pairs perfectly with actual snickerdoodle cookies, buttery shortbread, or a slice of apple bread.
