Ingredients
  

  • Cooking spray
  • 4 (8-ounce) salmon fillets
  • Sea salt to taste
  • New Mexico chile powder or your favorite chile powder
  • 4 tablespoons wild honey 1 tablespoon per fillet
  • Crushed garlic optional, for infused honey

Method
 

  1. Preheat your oven to 450°F (230°C).
  2. Season both sides of the salmon fillets with sea salt.
  3. Spray a large baking sheet with cooking spray and place the seasoned salmon fillets on it.
  4. Sear the fillets in the hot oven for about 2 minutes on one side.
  5. Brush each fillet with 1 tablespoon of honey. If desired, sprinkle a small amount of chile powder on top for extra flavor and color.
  6. Continue cooking for 5-8 minutes, or until the salmon flakes easily with a fork but still maintains a slight translucence in the center for perfect moisture.

Notes

For a spicier version, make chile-infused honey by combining honey, chile powder, and crushed garlic, then letting it sit for 1-2 weeks before using. This adds an extra dimension of flavor, though regular honey works beautifully too.
The salmon is done when it flakes easily but still has a hint of translucence in the center - this prevents the dry, chalky texture of overcooked fish.
Leftover salmon can be refrigerated for up to 3 days and is delicious cold in salads or gently reheated.
