  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 large tomato chopped
  • ½ cup chicken broth
  • 3 cloves garlic minced
  • pounds boneless skinless chicken breasts thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ cup parmesan cheese freshly grated preferred
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the thinly sliced chicken breasts with salt and pepper, then add to the hot skillet. Cook for about 5 minutes on each side until golden and cooked through.
  3. Remove the cooked chicken from the skillet and set aside on a plate.
  4. In the same skillet with the chicken drippings, add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth, then add garlic powder and Italian seasoning. Stir to combine and bring to a simmer.
  6. Pour in the heavy cream and bring the mixture to a gentle boil, whisking constantly until the sauce begins to thicken, about 3-5 minutes.
  7. Add the chopped tomato and spinach to the sauce, stirring until the spinach begins to wilt.
  8. Return the chicken to the skillet, nestling the pieces into the sauce.
  9. Sprinkle the parmesan cheese over everything and continue stirring until the cheese has completely melted and the sauce coats the chicken evenly.
  10. Serve immediately while hot and creamy.
