Method
- Mix the Monterey jack cheese, cream cheese, diced jalapeños, crumbled beef bacon, and minced garlic in a large bowl until well combined.
- Scoop out about 1 tablespoon of the filling and roll it into a compact ball. Arrange each formed ball on a parchment-lined baking sheet, repeating until all the mixture is used.
- Place the baking sheet with the cheese balls in the freezer for 20 to 30 minutes to allow the filling to firm up.
- Prepare three separate wide, deep plates for breading.
- Combine the flour, kosher salt, and pepper on the first plate.
- Beat the eggs with the water on the second plate.
- Mix the bread crumbs with garlic powder and cayenne pepper on the third plate.
- Remove the chilled cheese balls from the freezer. Working with one ball at a time, coat it in the flour mixture, then dip it into the egg mixture, and finally roll it in the seasoned bread crumbs, making sure each ball is evenly covered after each step. Repeat for all cheese balls.
- Pour vegetable or canola oil into a large skillet until it's about 1/4 inch deep. Heat over medium until the oil reaches 350°F (175°C).
- Fry the breaded cheese balls in batches, turning as needed, until they are golden brown on all sides, about 3 minutes per batch.
- Transfer fried bites to a paper towel-lined plate to absorb extra oil.
- Serve the jalapeno popper bites hot.
Notes
To make ahead, you can bread the bites and freeze them before frying, or fry and cool them completely, then freeze. Reheat from frozen in the oven or air fryer for best crispiness. Pork bacon or vegetarian alternatives can be used in place of beef bacon, and for less spice, remove all seeds from the jalapeños or substitute with a milder pepper. Store leftovers in the refrigerator for up to 3 days and reheat in the oven or air fryer to keep the exterior crisp.
