Ingredients
  

  • 2 pounds ground beef
  • 1 packet taco seasoning (1 1/4 ounce)
  • 4 ounces sour cream
  • 4 ounces mayonnaise
  • 8 ounces cheddar cheese shredded, divided
  • 1 yellow onion sliced
  • 2 cups biscuit mix
  • 2 tomatoes sliced
  • 1 green bell pepper sliced
  • 1 can sliced jalapeño peppers (4 ounce)

Method
 

  1. Preheat oven to 325°F.
  2. Brown ground beef in a skillet and drain excess fat. Stir in taco seasoning with specified water and simmer.
  3. In a bowl, combine sour cream, mayonnaise, half of the cheddar cheese, and half of the sliced onion.
  4. Prepare biscuit mix according to package directions to form a soft dough.
  5. Press dough into the bottom and slightly up the sides of a greased 9x13 inch casserole dish.
  6. Sauté remaining onions and green bell pepper until slightly tender.
  7. Layer ingredients on the biscuit base in this order: seasoned ground beef, sliced tomatoes, sautéed peppers and onions, creamy cheese mixture, remaining cheddar cheese, and jalapeños.
  8. Bake for 30-35 minutes until the biscuit base is cooked through and the top is golden and bubbling.

Notes

You can customize this recipe to your taste preferences. Try ground turkey or chicken instead of beef, or use black beans and corn for a vegetarian version. The biscuit base can be substituted with crushed tortilla chips or thinly sliced potatoes for a lower-carb option. The heat level can be adjusted by modifying the amount of jalapeños used.
