Ingredients
  

  • 8 cups green cabbage finely chopped (about 1 medium head)
  • 1/4 cup carrot shredded (about 1 small carrot)
  • 2 tablespoons onion minced
  • 1/2 cup mayonnaise
  • 1/3 cup granulated sugar
  • 1/4 cup whole milk
  • 1/4 cup buttermilk
  • 2 1/2 tablespoons lemon juice fresh is best
  • 1 1/2 tablespoons white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Finely chop the cabbage into confetti-sized pieces using a food processor or sharp knife.
  2. In a large bowl, combine the finely chopped cabbage, shredded carrots, and minced onion.
  3. In a separate bowl, whisk together mayonnaise, sugar, whole milk, and buttermilk until smooth.
  4. Add lemon juice, white vinegar, salt, and black pepper to the dressing mixture and whisk to combine.
  5. Pour the dressing over the vegetables and stir until everything is well coated.
  6. Cover and refrigerate for at least 4 hours or overnight for best results.
  7. Stir well before serving.

Notes

For the most authentic KFC taste, use full-fat dairy products and fresh lemon juice. The coleslaw needs at least 4 hours of refrigeration time to develop its flavors, but tastes even better when made a day ahead. The key to the perfect texture is chopping the cabbage very finely. You can substitute Greek yogurt for mayo for a lighter version, or use a milk-vinegar mixture if you don't have buttermilk.
